Cooking for royalty is a rare treat, especially in the United States, but next month celebrity chef Giada De Laurentiis will have the chance. Prince William and Kate Middleton will be stopping by the Santa Barbara Polo and Racquet Club on July 9 for a charity polo event, and the Food Network star will be keeping attendees well fed with some treats of her own.
“At first I was crazy nervous, but now I’m just purely excited,” said De Laurentiis describing her reaction to the job to correspondents on The Today Show. The gig consists of De Laurentiis creating and serving lunch during the Polo and Racquet Club’s Foundation Polo Challenge event, where Prince William will be competing as part of Team Royal Salute.

“Since it’s the first time that Princess Katherine [will come] to California, and I think it’s been a while since Prince William has been here as well,” said De Laurentiis, “I thought I would do sort of a light and fresh menu using a lot of seasonal ingredients – very colorful and, yes, with a California feel.”
De Laurentiis gave Today Show viewers a sneak peek at that light and fresh menu, which includes a pea pesto crostini with cherry tomatoes (perfect for the season), a California chopped salad with a grilled mix of corn, shrimp, zucchini and lettuces topped with tortilla strips and a lemon dressing, and a Chicken Milanese in a creamy tomato fennel sauce.
